Creamy Peanut Dressing (Asian- Inspired)

Makes about 1/2 cup (enough for 2-3 bowls)

Ingredients:

3 tablespoons natural peanut butter (smooth or crunchy)

1 tablespoon soy sauce

1 tablespoon rice vinegar or lime juice

1 teaspoon sesame oil

1 teaspoon maple syrup or honey (adjust to taste)

1-2 teaspoons grated fresh ginger

1 small garlic clove, finely grated or minced (optional)

2-3 tablespoons water

2-3 tablespoons warm water (to thin to desired consistency)

Optional heat: 1/2 tsp sriracha or a pinch of chili flakes

Instructions:

Whisk all ingredients together in a bowl or shake in a jar. Start with 2 tosp water and add more a little at a time until smooth and pourable.

Taste and adjust - add more soy sauce for salt, vinegar for tang, or sweetener to balance.

Drizzle over rice bowls just before serving, or serve on the side.

Great with:

Crispy tofu or tempeh

Steamed or roasted veggies (broccoli, carrots, bok choy)

Cold soba noodles or rice

Fresh herbs like cilantro, Thai basil, or mint
