Kelly's Vegan Bean Chili

2 Tbsp Avocado Oil

1 Onion, finely diced

3 cloves Garlic, minced

1 tsp Cayenne Pepper or Chili Powder

1 tsp Onion Powder

1 tsp Garlic Powder

1 tsp Cinnamon

1 tsp Cumin

1 tsp Paprika

1 can Diced Tomatoes

1 Red Bell Pepper

1 can Chickpeas

1 can Kidney Beans

1 can Black Beans

1 can Pinto Beans

Salt and Pepper to taste

手順

Saute onion, garlic, bell pepper, cayenne pepper/chili powder, garlic powder, onion powder, cinnamon, cumin, and paprika in avocado oil for 2 minutes over medium heat.

Add 1 can of tomatoes (do not drain) and cook for another 2 minutes.

Slightly drain and add 4 cans of beans (kidney, black, white, pinto, chickpeas, etc), lower heat to low setting, and continue to cook for another 5 minutes or until beans reach desired texture. Salt and pepper to taste.

Need only one can of diced tomatoes. It can be salted, unsalted, low sodium, fire roasted, etc.

Need four cans of beans. They can be any combination of beans, corn, chick peas, cannellini, etc.

Vegan option: add rehydrated TVP (Textured Veggie Protein) after sauteing onions and garlic in seasonings.

Non-vegan option: add ground beef, ground turkey, or ground chicken after sauteing onions and garlic in seasonings. Ensure ground meat is browned before adding four cans of beans.
