Strawberry Vinegar

Strawberry Vinegar

Yield: 4 c

Ingredients:

2 pints fresh strawberries

1 qt cider vinegar

1 c sugar

Directions:

Hull strawberries, halve them; set 1/4 c aside.

Place remaining berries in large bowl.

Pour vin over berries. Cover and set aside 1 hour.

Transfer vin and berries to large saucepot.

Add sugar and bring to boil.

Reduce heat and simmer, covered, for 10 mins.

Strain out berry mixture, pressing out liquid.

Pour vin into a 1-1/2 qt jar. Add reserved berries. Cover tightly.

Store in fridge.

*A T or 2 of strawberry vin in a glass with 8 oz club soda and ice makes a good drink.

Also makes an excellent basting sauce for chicken, duck, or pork.
