Shredded Chicken

3 boneless skinless chicken breasts

1/4 cup mojo marinade (like Badia)

1 14oz can diced tomatoes

1/2 tbsp adobo seasoning

1 tbsp taco seasoning

2 tbsp olive oil

salt & pepper

手順

Heat olive oil in a large sauce pan or pot over high heat. Brown chicken, with salt, pepper and adobo seasoning.

Add the mojo, tomatoes and taco seasoning. Bring to a boil, then lower the heat. Simmer, turning over occasionally, for about 30 min, until tender enough to shred.

Remove the chicken from the pot, but leave juices to thicken. Shred chicken, add back to the pot with juices, stir and enjoy!

to try:

- might add some chipotle chili powder, or regular chili powder. The mojo brings a lot of citrus, would the smoke of the chipotle complement? try it.0
