Orzo And Chicken

450 grams chicken breasts

salt and pepper

1 cup all purpose flour

2 tbsp olive oil

4 tbsp butter

2 cloves garlic

1/2 cup white wine (optional)

1 cup orzo

2 cups chicken broth

3 tbsp fresh lemon juice

3 tbsp capers

parsley, chopped (for serving)

Slice chicken breasts into thin, bite-sized strips and season with a generous amount salt & pepper.

Coat each of piece of chicken in flour and shake off the excess.

Heat olive oil in a large skillet over medium. Add chicken, being careful not to crowd the pan (work in batches if needed). Cook on each side until golden and cooked through (4 to 6 minutes per side). Set chicken aside on a plate.

To the same pan add butter garlic and wine (if using). Use a wooden spoon to scrape the brown bits off the bottom of the pan and stir occasionally until most of the wine has evaporated.

Add orzo and stir to coat it in the butter. Pour in the broth and bring to a gentle boil.

Reduce heat to low and cover. Cook orzo undisturbed for 12 to 15 minutes or until most of the liquid has absorbed.

Add lemon juice, capers, and cooked chicken; stir to combine. Season orzo with salt and pepper to your taste.

Serve with fresh parsley & enjoy!
