Dad and I had these shrimp rice rolls in Vietnam (aka shrimp bánh cuốn), and they quickly became our favorite snack—they were packed with protein and full of flavor. The best part? You can make them at home with just a few simple ingredients. 🙌

To make it:

1️⃣ Soak 3-5 sheets of rice paper in cool water until they bloom into soft, pillowy perfection (about 5 minutes with my favorite bamboo brand).

Marinate shrimp with black pepper, salt, and sesame oil.

Lay the shrimp on the rice paper, top with fresh scallions, and roll it up!

Steam until the shrimp turn orange and are cooked through.

Serve warm with fresh lettuce, a sprinkle of fried shallots, and drizzle with my family’s legendary nuoc cham sauce—the mother sauce! 🌿
