Chicken & Potato Bowl (Meal-Prep)

For the chicken
500g chicken breast or thigh, cut into bite-sized chunks
1 tbsp olive oil
1 tsp paprika
1tsp garlic powder
1/2 tsp dried thyme or oregano
Salt & pepper
1/2 lemon juice (optional)
For the potatoes
Small potatoes or cut potatoes into smaller cubes (e.g white, brushed, or sweet potato)
1 tbsp olive oil
Salt & pepper
1/2 tsp garlic powder or rosemary (optional)
Optional add-ins / toppings
1-2 cups steamed or roasted veg (e.g broccoli, zucchini, carrot, corn)
1/2 avocado, sliced (optional)
1-2 tbsp Greek yoghurt or sour cream
Fresh herbs (parsley, coriander)
Lettuce
Cucumber
Chilli flakes or hot sauce (optional)

Roast the potatoes
Preheat oven to 200°c (fan 180°c)
Wash and dice potatoes (leave skin on for extra fibre)
Toss with olive oil, salt, pepper, and optional garlic powder
Spread on a baking tray and roast for 25-30 mins, flipping halfway, until golden and crispy
Cook the chicken
While potatoes roast, heat olive oil in a pan over medium heat
Add the chicken, season with paprika, garlic powder, thyme, salt, & pepper
Cook for 7-10 minutes, stirring occasionally, until golden and fully cooked
Optional: squeeze lemon juice over chicken before serving
Steam or roast veggies - (if using)
You can steam broccoli, carrots, or use frozen mixed veg
Alternatively, roast them with the potatoes on a second tray
Assemble the bowl
In a bowl or meal prep container, add:
Roasted potatoes (base)
Chicken pieces
Steamed / roasted veggies
Optional: avocado, Greek yoghurt, herbs, or hot sauce

Meal prep tips:
Store bowls in the fridge for up to 4 days
Keep yoghurt / sauces seperate until serving if possible
Reheat in microwave or oven (covered) until warm
Chicken and spinach are good mixed together
