Apple Cider Bread

2 cups all purpose flour
½ cup unsalted butter, (softened)
2 cups apple cider
1 cup brown sugar
1 large egg
1 teaspoon vanilla
½ teaspoon ground cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ cup butter, (melted)
½ cup granulated sugar
2 teaspoons ground cinnamon

Preheat your oven to 350°F and grease your loaf pan with non-stick spray, butter, or line it with parchment paper.
In a small saucepan, warm your apple cider over medium-high heat until it is to a boil. Once it is boiling, reduce the heat and simmer for 20 minutes, or until it is reduced by half. It make take a bit longer, so keep an eye on it.
In the mixing bowl of your electric mixer, cream the brown sugar and butter.
Add in the egg and vanilla. Beat for 10 seconds.
To that, add the reduced apple cider, flour, cinnamon, baking powder, baking soda, and salt. Mix until combined. Don't overmix, just mix until the ingredients are fully incorporated.
Pour your batter into your prepared loaf pan and sprinkle the crumble topping over it.
Bake for 50 minutes, or until a toothpick inserted in the middle comes out clean. Let cool for 15 minutes, slice, and enjoy!
Crumble Topping
In a small bowl, add your butter, sugar, and cinnamon. Mix well with a fork.
