Three Cheese Baked Gnocchi with Spinach

2 tablespoons olive oil

quarter of an onion, minced

1 large clove garlic, minced or thinly sliced

12 ounces tomato purée

1/2 cup broth or water

torn basil (handful)

1/4 cup mascarpone cheese (or see notes)

1/2 teaspoon salt

one 16-ounce package gnocchi (I used shelf-stable gnocchi but frozen would also work)

a handful of baby spinach

8 ounces fresh mozzarella cheese slices or grated mozzarella

Parmesan cheese

  1. Preheat oven to 400 degrees.

  2. Heat the olive oil over medium low heat. Add the onion and garlic; sauté until translucent and fragrant.

  3. Add purée and broth (or water); bring to a low simmer.

  4. Add torn basil, mascarpone, and salt, then add gnocchi and spinach. Stir to coat evenly with sauce.

  5. Top with mozzarella slices and a sprinkle of Parmesan. Bake for 15-20 minutes, until gooey and light golden brown on top.

  6. Serve with more basil. THE END.

メモ

Rachel: I didn’t have tomato purée so I made my own using tomato paste (5 Tbsp) and water (1.5 cups). I think it’d be yum to add (or replace if you’re Jenn) sautéed red peppers to the onion/garlic.

I also didn’t have mascarpone cheese so followed the internet to make a substitute using a mix of cream cheese with a bit of heavy cream and sour cream.

I served on a bed of spinach and thought it was yum.
