Lemon Ricotta Pasta

2 cups pasta
1 cup ricotta cheese
1 cup Parmesan cheese
1 cup pasta water
Zest of 1 lemon
2 tbsp lemon juice
1 handful arugula
Fresh basil for garnish
Salt and pepper to taste
手順
1.Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain, reserving 1 cup of pasta water.
2.In the same pot, combine the pasta, ricotta cheese, Parmesan cheese, lemon zest, and lemon juice. Mix well.
3.Gradually add the reserved pasta water, stirring until the sauce reaches a creamy consistency. The more water you add, the creamier the sauce.
4.Stir in the arugula and season with salt and pepper to taste.
5.Garnish with fresh basil and extra Parmesan before serving.
