Macro-Friendly Queso Chicken Rolls

20 oz (3) chicken breast

1 juice of lime

1 packet taco seasoning

200g 2% cottage cheese

75g fat free greek yogurt

4 tablespoons salsa

2 tablespoons red enchilada sauce

garlic powder

to taste:

4 tablespoons pico de gallo

50g light cheese

50g fat free cheddar

8 low carb burrito tortillas

Preheat oven to 400°. Tenderize chicken with fork, add juice of one lime, and season with taco seasoning. Air fry at 400° for 12-15 minutes

While chicken is cooking in the air fryer, blend cottage cheese, yogurt, salsa, enchilada sauce, garlic powder, and salt to make a "queso sauce".

When chicken is cooked, chop into small pieces and then combine with "queso sauce", pico, and cheese. Fill 8 low carb burrito tortillas and place on a baking sheet. Bake at 400° for 8-10 minutes and enjoy.
