Bigggg Summer Roll with Creamy Peanut Dipping Sauce

RECIPE (for 1 large roll):
3 rice papers, hydrated
1 large iceberg lettuce leaf
½ cup cooked vermicelli noodles
2 carrots, cut into sticks
2 Persian cucumbers, cut into sticks
Purple cabbage, shredded
5 oz cooked shrimp
Fresh cilantro
Peanut Dipping Sauce:
½ cup peanut butter
2 tbsp soy sauce
1 tbsp rice vinegar
2 tbsp honey
1 tbsp hoisin sauce
1 clove garlic, minced
Juice of 1 lime
1 tbsp chili oil or sriracha
2-3 tbsp water (more to thin, if needed)
Layer 3 rice papers in cold water to hydrate. Lay out on a damp towel with one on the bottom and two on the top.

Add your lettuce, noodles, veggies, shrimp, and cilantro in the center. Roll tightly into burrito shape and slice in half.
Mix all sauce ingredients until smooth and creamy. Dip and enjoy!!
