Chili and Herb Spiced Beef

2 teaspoons extra-virgin olive oil

1 pound 85 percent lean ground beef OR ground lamb

2-3 serrano chilies OR jalapeño chilies, stemmed and sliced into thin into rounds

2½ teaspoons ground coriander

Kosher salt and ground black pepper

1 small red onion, halved and thinly sliced OR 1 cup chopped tomatoes

1 bunch flat-leaf parsley OR cilantro, roughly chopped

2 tablespoons pomegranate molasses OR lemon juice

手順

In a nonstick 12-inch skillet, heat the oil until shimmering. Add the beef, chilies, coriander, a pinch each of salt and pepper and enough water to just barely cover. Bring to a simmer and cook, stirring to break up the beef, until the water has evaporated and the mixture sizzles. Add the onion and cook, stirring, just until slightly softened, then stir in the parsley and pomegranate molasses. Season with salt and pepper.
