Lavash Bread Pizza

1 tbsp avocado oil
8 ounces baby bella mushrooms (thinly sliced)
5 ounces fresh baby spinach
salt to taste
3 pieces lavash bread, cut in half (I use Trader Joe's)
1 1/2 cups arrabbiata sauce (I use Rao's)
mushroom spinach saute mixture from above
1/2 cup kalamata olives (sliced)
1 1/2 cups parmesan cheese
handful fresh basil leaves (julienned)
to taste crushed red pepper flakes
3 piece whole wheat lavash bread (I use Trader Joe's)
2 spoonfuls arrabbiata sauce (I use Rao's)
few spoonfuls mushroom-spinach mixture
few kalamata olives, sliced
1/4 cup parmesan cheese, grated
few fresh basil leaves (julienned)
to taste crushed red pepper flakes

Step 1 - Prep
Heat up a cast iron skillet on medium heat, once hot, add oil.
Add sliced mushrooms. Saute for 3 minutes and season with a little salt.
This is what you should have.
Add 5 ounces of spinach. Season with salt to taste. Cook for 3 minutes or until the spinach wilts.
Once veggies are cooked, turn off the stove.
Transfer the spinach mushroom mix to a paper towel to help soak the moisture. Doing this step will ensure your pizza won't be soggy.
Step 2 - Assemble
Split whole wheat lavash bread (I love Trader Joe's) in half.
Spread 2 spoonfuls of your favorite marinara sauce (I used Rao's Arrabbiata Sauce). Don't add too much sauce else your pizza will be soggy.
Spread some of the spinach mushroom mixtures. Also, top with sliced olives.
Top with shredded parmesan cheese.
Place the lavash bread into a toaster oven and bake at 400 degrees for 5-6 minutes. The lavash bread will get toasty.
Once done, remove the pizza from the toaster oven.
Cut lavash pizza into fours. Top with julienne basil and crushed red pepper.
