Ground Beef Zucchini Sweet Potato Skillet

1 lb ground beef

2 medium zucchinis, sliced into half-moons

2 medium sweet potatoes, peeled and diced

1 small onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/4 teaspoon chili flakes (optional)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

In a large skillet over medium heat, add olive oil.

Add the diced sweet potatoes and cook for 8–10 minutes, stirring occasionally until tender and lightly browned. Remove and set aside.

In the same skillet, add the ground beef and cook until browned and fully cooked. Drain excess fat if necessary.

Stir in diced onion and cook for 2–3 minutes until softened. Add garlic and cook for 1 minute more.

Add the zucchini, smoked paprika, cumin, chili flakes, salt, and pepper. Stir and cook for 5–6 minutes until zucchini is tender.

Return the sweet potatoes to the skillet and stir everything to combine.

Cook an additional 2–3 minutes to heat through.

Garnish with fresh parsley and serve warm.
