Broccoli Cheddar Soup Meets Mac & Cheese in This Healthy(ish

here’s what you’ll need:

pasta shells

onion + garlic

broccoli florets

cottage cheese (for protein)

cheddar + mozzarella

chicken broth (for the soup vibes)

blend the sauce, stir in all the cheese, and let everything melt into one big bowl of comfort.

like if broccoli cheddar soup and mac & cheese had a cozy little baby 🥹

BROCCOLI CHEDDAR SOUP PASTA

1/2 lb small pasta shells • 2 tbsp olive oil • 1/4 cup diced onion • 4 garlic cloves, minced • 2 cups broccoli florets • 1 cup chicken broth • 1/2 cup heavy cream • 5oz cottage cheese (one small carton) • 1 cup cheddar, grated • 1 cup mozzarella, grated

1) bring a large pot of water to a boil and cook pasta until al dente

2) add olive oil to large sauté pan and cook onion until translucent. add garlic and broccoli and cook until softened

3) add chicken broth and simmer 5-10 minutes until reduced a bit. reduce heat.

4) in a small blender or magic bullet, blend cottage cheese with cream until smooth

5) add cottage cheese mixture to sauté pan, and stir to combine. slowly add the cheddar and mozzarella; stirring until a thick cheese sauce forms

6) add pasta and toss to coat. serve in bowls topped with more mozzarella
