Garlic Miso Roast Chicken

This is a recipe I make every now and then when I want a big batch of flavourful chicken cooked for either a large gathering or meal prep. It’s aromatic, umami and incredible easy to make.
You can half the recipe if you want to make a smaller portion.
2-2.5kg boneless chicken leg (or cut of your choice)
4 spring onion (cut)
3 tbsp oil
Marinade:
12 cloves garlic
30g ginger
1/3 cup brown sugar
1/4 c light soy sauce
2 tbsp ponzu or rice vinegar
2 tbsp oil
4 tbsp miso (I used white)
Blitz all the marinade ingredients together, and combine with the chicken. Marinate overnight in the fridge or 2 hours minimum.

Preheat oven to 240C roast.
Line baking tray with cut spring onion and lay chicken on top. Cook for 18-20min until chicken is cooked through, serve with pan juices. Enjoy with rice and veggies or store in the fridge as meal prep.
