2 tbsp low-sodium soy sauce

1 tbsp gochujang (Korean chili paste)

1 tbsp honey

1 tbsp rice vinegar

1 tbsp minced garlic

1 tsp sesame oil

Salt & pepper to taste

1 tbsp chopped green onion (for topping)

Optional: red pepper flakes for extra heat

For the Rice Base:

2 cups cooked jasmine or brown rice (or cauliflower rice for lower carbs)

Cucumber Salad (divided evenly):

1 large cucumber, chopped

½ cup cherry tomatoes, halved or chopped

1 small shallot, finely chopped

1 tbsp balsamic vinegar

1 tbsp olive oil

1 tbsp chopped fresh basil

1 tsp chopped fresh oregano

Salt & pepper to taste

Optional Toppings:

Sesame seeds

Sriracha drizzle or spicy mayo (Greek yogurt base)
