Creamy Orzo

4 tbsp olive oil
shallot, diced fine
1/2-1 tbsp red pepper flakes
4 cloves of garlic, sliced thin
4 tbsp tomato paste
225 grams orzo
3 cups water
1/2 tsp salt
1/2 cup cream
1 cup grated parmesan, plus more for serving,
4 tbsp pesto
4 tbsp ricotta (or more if needed)

Place a large frying pan or pasta pot over low heat on the stove. Add olive oil.
Add the diced shallot and red pepper flakes. Cook gently until softened and translucent, about 5–7 minutes.
Stir in the sliced garlic and tomato paste. Cook for 2–3 minutes, stirring frequently so the garlic does not burn.
Add the uncooked orzo to the pan and spread it out evenly.
Pour in 3 cups of water and add the salt. The water should just cover the pasta.
Increase the heat to medium and bring to a gentle simmer. Cook for 10–12 minutes, stirring frequently so the orzo doesn’t stick.
Taste the pasta. It should be al dente and most of the liquid absorbed. If it’s still too firm, add up to ½ cup more water and simmer a few more minutes.
Reduce heat to low and let the mixture cool slightly for 1–2 minutes.
Stir in the cream and grated parmesan. Mix until smooth and creamy.
Spoon into bowls. Top each serving with ricotta, pesto, and extra parmesan. Finish with black pepper if desired.
