Easy Lobster Tail

2-4 lobster tails (thawed)

2 tbsp Extra Virgin Olive Oil

1 tbsp Lemon juice (freshly squeezed)

2 cloves Garlic, minced

1/2 tsp Smoked paprika

1/2 tsp Salt (or to taste)

1/4 tsp Black pepper

1. Preheat & Prep: Preheat your oven to Broil on High (usually 500°F/260°C). Place the oven rack in the upper-middle position, about 6 inches from the heat source.

2. Butterfly the Tails: Using kitchen shears, cut down the center of the hard shell lengthwise, stopping just before the tail fin. Use your thumbs to crack the shell open, and gently pull the lobster meat upward, leaving the end attached to the tail fin. Rest the meat on top of the shell.

3. Make the Marinade: In a small bowl, whisk together the olive oil, lemon juice, garlic, paprika, salt, and pepper.

4. Season: Brush or drizzle the olive oil mixture generously over the exposed lobster meat.

5. Broil: Place the tails on a baking sheet. Broil for 1 minute per ounce of tail (e.g., 4-5 minutes for a 4-5 oz tail, or 8-10 minutes for larger tails).

6. Serve: The meat is done when it is opaque, firm, and the shells are bright red. Garnish with parsley and fresh lemon wedges.

Prevent Curling: Insert a wooden skewer through the length of the meat to keep it straight while cooking.

Don't Overcook: Lobster dries out quickly. Watch closely in the last minute of cooking.

Other Substitutes: If you are avoiding dairy but want a richer flavor, you can use ghee or avocado oil instead of olive oil.

Aioli Pairing: Serve with a simple aioli (mayonnaise, garlic, and lime juice) for a creamy, dairy-free alternative to butter.
