4 lemons produced over 1/2 gallon juice

Citric acid

Peel lemons

Weigh peels

Add equal weight of citric acid powder to peels ( for example, for 20 grams of lemon peel add 20 grams of citric acid) into a sealable glass container ( the acid will mess with a metal or plastic container)

Shake the container to make sure all the peels are coated in citric acid.

Let the peels sit for 1 to 1 1/2 hours.

Take the weight of the peels, multiply by 16.67. This is the amount of water you will need. (For example if you have 20 grams of peels you will need 20x16.67=333.4 grams of water.)

Add the peels, remaining citric acid, and liquid to a blender. Use the water you weighed out to rinse the glass container to get all the peels and acid into the blender.

Add all water to the blender.

Juice the peeled lemons, add the juice to the blender.

Blend in high until smooch

Run the liquid through a strainer to get out the chunks.
