3 medium Potatoes (peeled and diced)
1 medium Onion (chopped)
1 bell pepper (chopped)
2 cloves Garlic (minced)
1 tsp Paprika

1/2 tsp Garlic Powder
1/2 tsp Salt
1/4 tsp Black Pepper
1 cup Beef Broth (or chicken broth)
1 cup Cheddar Cheese (shredded, or your favorite cheese)
1 tbsp Olive Oil (for cooking)
Fresh Parsley (optional, for garnish)

Cook the Potatoes
:
Add the diced potatoes to the skillet and cook, stirring occasionally, for about 8-10 minutes until they start to soften and lightly brown.
Remove the potatoes from the skillet and set aside.
Cook the Ground Meat
:
Drain any excess fat if needed.
Add Vegetables and Seasonings
:
Stir in the paprika, onion powder, garlic powder, salt, and pepper. Cook for an additional 3-4 minutes until the vegetables are softened.
Combine and Simmer
:
Cover and let it simmer for about 5 minutes, or until the potatoes are tender and the liquid has reduced slightly.
Add the Cheese

Cover and let the cheese melt for 2-3 minutes until bubbly and golden.
