1-1.5 lb pork tenderloin, silver skin removed and cut into 3/4” medallions

8 oz baby Bella mushroom, sliced

1 leek (white & light green parts only), halved lengthwise and then slice thinly

1 ½ tbsp olive oil, divided

2 tbsp butter

2 cloves garlic, minced

1/4 cup dry white wine

2 tsp Dijon mustard

2 tsp Worcestershire sauce

1 tbsp soy sauce

1/4 tsp mushroom seasoning

1/2 tsp red pepper flakes, optional

1/2 cup unsalted chicken or beef stock

3/4 cup heavy cream

Salt & black pepper

Parsley, for garnish
