Beef Ho-fun Noodles – Recipe Below – This Quick and Easy Noo

250g beef topside or skirt/hanger steak, very thinly sliced
1 tsp corn starch
¼ tsp bicarbonate of soda
¼ tsp white pepper – optional
2 tbsp rice wine
2 tsp light soy sauce
2 tsp + 1 tbsp neutral oil
400g fresh ho-fun noodles, separated (or 200g fat rice noodles)
2 tbsp oyster
1 ½ tbsp dark soy
½ an onion, thinly sliced
A large handful of roughly chopped Chinese chives or 4 spring onions
150g bean sprouts
1. Cut the beef, across the grain into very thin bite sized pieces. Pop it into a bowl and add the corn starch, bi-carb, white pepper, 1 tbsp rice wine, light soy and 2 tsp of the oil. Mix well and leave for 5 minutes.
2. Whilst that sits, separate the ho-fun or prep the rice noodle
3. Mix the oyster sauce together with the dark soy sauce and the remaining 1 tbsp of rice wine.
4. Heat the oil in a wok over a high heat. Add the beef and stir-fry for 2-3 minutes until just cooked through and a little golden. Remove the beef from the wok and set to one side.
5. Reheat the work over a high heat. Add a little more oil if it needs it. Add the onion and stir-fry for 1-2 minutes until a little charred. Add the Chinese chives and stir-fry for a minute to soft and then add the noodles, beansprouts and sauce. Stir- fry for 3-4 minutes until the noodles are tender. Return the beef to the pan and stir-fry together. Check the seasoning, adding soy to taste and serve immediately.
