Spicy Peruvian Chicken-hello Fresh

2 scallions

4 cloves of garlic

1 tomato

4 tbsp fajita spices

Chicken broth powder

2 cups Jasmine rice

20 oz chicken.... 2 breasts cut in half

7 tbsp sour cream

Pepper

1/2 tsp sugar

4 tbsp butter

Mince garlic

Trim and thinly sliced scallions separating whites from greens. Finley slice jalapeno into rounds; removing ribs and seeds for less heat. Zest and quarter lime. Diced tomato into half inch pieces.

Melt 4 tablespoon of butter, add scallion whites remaining garlic and 4 tsp of fajita spice blend to pot. Cook, stirring, until softened and fragrant.

Add rice, chicken stock powder and water to the pot. Bring to boil and cover. Reduce heat to a simmer. Cook until rice is tender, about 15 minutes.

In a second bowl, add jalapenos, juice from half a lime, 1/4 tsp sugar and a pinch of salt. Microwave for 30 seconds and stir occasionally.

Pat chicken dry and season with fajita spice blend, salt and pepper.

Cook in a skillet with oil, and then let chicken rest on a plate.

While chicken cooks, remove jalapenos from pickling liquid. Reserve a few rounds for garnishing. Mince remaining.

To bowl add some garlic, sour cream, squeeze of lime, and mine jalapeno.

Fluff rice, stir in tomato, half the green scallions, and squeeze of lime juice and minced jalapeno.

Cut chicken and serve
