STUFFED PORTOBELLO MUSHROOMS WITH BRIE AND BACON

4 Portobello mushrooms, stalks removed
1 tbsp olive oil
100g smoked bacon lardons
100g breadcrumbs
75g fresh chives, finely chopped
100g Brie, sliced
Salt and black pepper

1 Preheat the oven to 200°C/180°C fan/ gas mark 6.
2 Place the Portobello mushrooms on a baking tray. Season with salt and pepper and bake for 10 minutes.
3 Heat the olive oil in a frying pan, add the bacon lardons and cook for five minutes or until crispy.
4 Spoon the bacon lardons into the mushrooms, place the sliced Brie on top and sprinkle breadcrumbs all over. Roast the mushrooms for a further six minutes or until the tops are golden.
5 Place the mushrooms on a serving plate, sprinkle over the chives and serve.
