Five-Spice Glazed Salmon With Savoy Cabbage

For the sauce:

2 tablespoons seasoned rice wine vinegar

¼ cups peach or apricot jam

2 teaspoons double-concentrated tomato paste (may substitute 4 teaspoons regular tomato paste)

1 teaspoon Chinese five-spice powder

1 teaspoon toasted sesame oil

1 tablespoon water

For the salmon:

1 teaspoon Chinese five-spice powder

1 teaspoon ground ginger

⅛ teaspoons salt

Four (5 to 6 ounces each) skinless salmon fillets

5 teaspoons toasted sesame oil

1 teaspoon olive oil

¾ pounds savoy cabbage (discolored or wilted outer leaves discarded), cored and cut into thin slices

2 tablespoons water

Step 1

For the sauce: Combine the vinegar, jam, tomato paste, five-spice powder, sesame oil and water in a small saucepan over medium heat. Cook for 4 to 5 minutes, stirring, until the jam melts, to form a sauce. Remove from the heat. The yield is a generous 1/2 cup.

Step 2

For the salmon: Combine the five-spice powder, ginger and salt in a small bowl, then rub all of the mixture evenly over the fillets. Drizzle a teaspoon of the sesame oil over each fillet. Let sit for 15 minutes.

Step 3

Position the top oven rack 4 to 6 inches from the broiling element. Position the next oven rack in the middle of the oven; preheat the broiler.

Step 4

Place the spice-rubbed fillets on a broiler pan or on a baking sheet lined with aluminum foil. Brush each fillet with a scant tablespoon of the sauce. Broil on the top rack until the sauce forms a nice glaze, about 5 to 6 minutes. Reduce the heat to 350 degrees, then transfer the pan or baking sheet to the middle oven rack and roast for 4 to 6 minutes or until the salmon is just cooked through. Remove from the oven; cover loosely to keep warm.

Step 5

Heat the remaining teaspoon of sesame oil and the olive oil in a large saucepan over medium heat. Add the cabbage and water; cook, stirring, for 1 minute. Cover and cook undisturbed for 2 to 3 minutes, until the cabbage just starts to wilt. Uncover and cook, stirring, for 2 to 3 minutes. The cabbage should still have a little body.

Step 6

Divide among individual plates. Top each portion with a piece of salmon. Use the remaining sauce to drizzle over each fillet; serve immediately.
