Pillowy Mediterranean Zucchini WITH GARLIC FETA SAUCE

2 medium zucchini

Salt

FOR THE GARLIC FETA SAUCE

3 tablespoons plain

Greek yogurt

1 ounce crumbled feta cheese

1 garlic clove

Handful of fresh mint

¼ cup freshly squeezed lemon juice

½ teaspoon lemon zest

Salt and freshly ground black pepper

¼ cup avocado oil

OPTIONAL TOPPINGS

1 ounce feta cheese, crumbled

1 tablespoon chopped fresh mint

1 tablespoon crushed toasted pistachios

½ teaspoon lemon zest

½ teaspoon sumac

Petunjuk

1. Rinse the zucchini and cut in half lengthwise. With a sharp knife, score the cut sides diagonally in both directions to make a crosshatch pattern. Sprinkle them with salt and let sit for 20 to 30 minutes. Remove the excess moisture by dabbing the zucchini with a paper towel.

2. Preheat the oven to 450°F

3. For the garlic feta sauce: While the zucchini drains, combine in a food processor the yogurt, feta, garlic, mint, lemon juice, lemon zest, and salt and pepper to taste. Blend well.

4. Add avocado oil to a medium cast-iron skillet or stainless-steel pan. When the oil is hot, place the zucchini face down, and cook over medium-high heat for 4 to 5 minutes until the zucchini turns golden brown.

5. Transfer the pan with the zucchini to the oven and bake for 5 minutes, flip the zucchini, and bake for another 5 minutes.

6. Remove from the oven. Spoon the sauce onto a serving dish, add the zucchini face up, and garnish with your choice of toppings, such as feta, fresh mint, pistachios, lemon zest, and sumac.

Catatan

You haven't had a zucchini like this pillowy Mediterranean version. It's my own Mediterranean spin on the viral Thomas Keller Zucchini. You simply cut the zucchini in half and score it so that it absorbs all the amazing flavor from the sauce. I seasoned mine with a simple, creamy garlic, feta, and mint sauce, then topped it with some more feta and mint, along with crushed pistachios, lemon zest, and sumac. It comes together in minutes, making it one of the easiest ways to elevate zucchini. The flavors and textures are simply legendary!
