Shishtawouk With Garlic Yoghurt Pasta

Garlic Yoghurt Pasta with Shishtawouk

Shishtawook:

1kg diced chicken breast or thigh

1 heaped tablespoon of garlic dip (toum), see note

1 tablespoon greek yoghurt

1/4 cup fresh lemon juice

1/4 cup olive oil

1 teaspoon capsicum paste

1 teaspoon dry oregano

1 teaspoon chicken stock powder

1 teaspoon sweet paprika

1/2 teaspoon cracked black pepper

1/2 teaspoon ground cinnamon

Salt to taste

Petunjuk

Combine all ingredients & allow to marinade for atleast an hour.

500g shell pasta

3 cups greek yoghurt

4 cloves crushed garlic

1/4 cup water

1/2 teaspoon dry mint

1 heaped tablespoon ghee

1/4 cup pine nuts

Salt to taste

To garnish:

Almonds

Butter or ghee to toast almonds

Parsley

Middle eastern style pickled cucumber

Add olive oil to a pan & start browning your chicken, cook until golden on all sides.

Bring a pot of water to the boil & boil your pasta to pack directions.

Whisk the garlic, salt, & water together and add the yoghurt. Add the mint & mix. Drain pasta give it a quick rinse then add the pasta to the yoghurt.

Layer your plate with a few spoonfuls of garlic yoghurt pasta, top with shishtawouk & finish with some toasted almonds in butter & fresh parsley.
