Cheesesteak Tortellini in Provolone Cream Sauce

1 lb refrigerated cheese tortellini
1 tbsp olive oil
1/2 lb thinly sliced steak (ribeye or sirloin), cut into strips
1 green bell pepper, sliced
1 small onion, sliced
2 cloves garlic, minced
1 tbsp all-purpose flour
1 cup beef broth
1 cup heavy cream
1 cup shredded provolone cheese
Salt and black pepper, to taste
Fresh parsley, for garnish

Cook the tortellini in salted boiling water according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium-high heat. Sear the steak strips for 1 to 2 minutes per side until just browned. Remove and set aside.
In the same skillet, add the sliced peppers and onions. Sauté for 5 to 6 minutes until softened. Add garlic and cook for another minute.
Sprinkle in the flour and stir to coat the vegetables. Slowly whisk in the beef broth and heavy cream, stirring constantly to prevent lumps.
Simmer for 3 to 4 minutes until slightly thickened, then stir in the provolone cheese. Mix until smooth and creamy.
Return the steak and cooked tortellini to the skillet. Toss to coat everything in the sauce.
Season with salt and pepper to taste. Let everything warm through for 1 to 2 minutes.
Serve hot, garnished with fresh parsley.
