1 sheet of frozen shortcmst pastry, partially thawed 60g butter, softened 2 tbsp caster sugar 1 egg 1 tsp vanilla extract 2 tbsp almond meal 1 tbsp plain flour 70g mixed berries To serve: Avonmore Fresh Dessert Cream

Petunjuk

1 Preheat the oven to 200]'C/180]'C fan/gas mark 6 and grease a fairy cake tin. Cut out rounds from the pastry and press into the cups. Prick the bases with a fork and freeze

for 10 minutes.

2 Line each cup with a round of parchment paper and fill each with baking beans. Bake for 10 minutes until just golden.

3 Remove the beans and paper and bake for another 10 minutes until golden brown. Remove from the oven and reduce the temperature to 180°C/160°C fan/gas mark 4.

4 Beat the butter and sugar for 2-3 minutes until creamy. Beat in the egg and vanilla until combined. Stir in the almond meal and flour.

5 Add the berries and stir gently until combined. Divide the mixture among the tart shells and bake for another 15-20 minutes until the filling is set and light golden. Leave to stand for 10 minutes before removing from

the tins. Serve with Fresh Dessert Cream.
