Oven-fried chicken

80g cornflakes, crushed
20 wholegrain crackers, crushed
1 tsp chilli powder
Vz tsp garlic powder
2 egg whites
240g non-fat natural Greek yoghurt
1 tbsp Dijon mustard
Salt and black pepper
4 chicken fillets
4 chicken thigh fillets
To serve:
Baked potatoes
Steamed broccoli
Petunjuk
1 Preheat the oven to 190"C/170"C fan/gas
mark 5 and coat a baking tray with olive oil
cooking spray.
2 Toss the cornflakes, crackers, chilli powder
and garlic powder in a shallow bowl.
3 Beat the egg whites, yoghurt and mustard
in a bowl and season with salt and pepper. Add
the chicken pieces and toss to coat.
4 One by one, add each chicken piece to the
cornflake mixture, turning to coat on all sides.Transfer
to the baking tray and repeat with the other pieces.
5 Lightly coat the chicken with the olive oil
cooking spray. Bake for 40-50 minutes until
cooked through. Serve with baked potatoes
and steamed broccoli.
