HONEY SOY CHICKEN THIGHS

3 tbsp soy sauce - dark or light works

3 tbsp honey

2 garlic cloves, peeled and crushed

5cm (2in) piece of root ginger, peeled and finely grated

½/ tsp sriracha sauce

8 bone-in chicken thighs, skin and all visible fat removed, about 1kg

1 tbsp sesame seeds (optional)

TO ACCOMPANY (optional)

50g uncooked basmati rice, cooked according to packet instructions (+ 173 kcal per serving)

Petunjuk

  1. Add the soy sauce, honey. garlic, ginger and srirache souce to a small mixing bowl and stir to combine

  2. Place the chicken thighs in an ovenproof dish and pour over the honey and soy sauce mix. Cover with cling fim and allow to marinate for at least 1 hour in the fridge Preheat the oven to 220°C (fan 200°C/gas mark 7) then pop the chicken thighs in the oven and cock for 15 minutes. After 15 minutes, turn the chicken thighs over so that the meat doesn't dry out. Cook for a further 15 minutes.

  3. Again, turn the chicken over and cook for another 15 minutes. The sauce on the chicken thighs should have reduced and started to become sticky.

  4. If using the sesame seeds, add to a frying pan and heat over a medium heat for a few minutes until lightly golden. Leave to one side.

  5. Remove from the oven and check that the chicken thighs are cooked through and that no pinkness remains. Sprinkle over the toasted sesame seeds and serve with your choice of accompaniment.

  6. Serve with basmati rice or your choice of accompaniment.
