Japanese Egg Potato Salad

Bahan-bahan

2 potatoes

4 soft-boiled eggs (1 for the top)

1/2 cucumber, thinly sliced

A few strips of beef bacon (or any kind)

Dressing

2 tbsp Greek yogurt

1 tbsp mayo

1 tbsp mustard

5 tbsp soy milk (or milk)

1 tsp black pepper & salt

Petunjuk

Step 1: boil the potatoes for 20 min and eggs for 10 min. (Remove one egg after 4-5min for the top)

Then transfer to ice water for 5 to 10 minutes. Shells slide right off.

Step 2: Crisp the bacon in a pan. Set it aside.

Step 5: Add and whisk the dressing in a bowl.

Step 6: Add the eggs, potatoes, cucumber and the beef bacon. Smash everything with a spoon. Top with the last jammy egg, crack it open, and serve.
