STEAK:
• 1 pound shaved/thinly sliced ribeye steak
• 1/3 cup low-sodium soy sauce
• 1 tablespoon oyster sauce
• 1 tablespoon chili paste
• 1 tablespoon sesame oil
• 1/4 teaspoon black pepper
• 1 tablespoon minced garlic
• 2 teaspoons ginger paste
• 2 tablespoons brown sugar
• 1 tablespoon rice vinegar
• 2 teaspoons chili powder
• 1 teaspoon cornstarch mixed with 2 tablespoons water
• 2 to 3 tablespoons butter or oil
FOR ASSEMBLY:
• 7 ounces cooked udon noodles
• 1/4 cup green onion, thinly sliced
• 1/4 cup yellow sweet corn
• 2 fried eggs
Petunjuk
1. In a small bowl, mix together the soy sauce, oyster sauce, chili paste, sesame oil, black pepper, garlic, ginger, brown sugar, rice vinegar, chili powder, and cornstarch slurry until well combined. Set aside.
2. Heat a large skillet over medium-high heat and add a tablespoon of butter or oil.
3. Arrange the thinly sliced steak around the edges of the pan, leaving the center empty.
4. Place the cooked udon noodles in the center of the skillet.
5. Pour the prepared sauce over the steak, making sure it's evenly coated.
6. Let everything sizzle and cook together, stirring the steak occasionally to ensure even cooking, about 6 to 8 minutes, until the steak is fully cooked and the sauce has thickened.
7. In a separate pan, fry an egg to your desired doneness.
8. Top the udon and steak with green onions, sweet corn, and the fried egg. Finish with extra black pepper.
Catatan
For 20oz rib eye I did 14oz dried udon and 1.25 of the sauce
