Pan-roasted Sausage and Potatoes Skillet

10–12 ounces smoked sausage or chorizo, sliced into thick rounds

1 pound potatoes, scrubbed and cut into cubes

1 large onion, roughly chopped

1 small red bell pepper, sliced (optional)

3 tablespoons olive oil

1 teaspoon paprika

1 teaspoon dried oregano or Italian seasoning

Salt, to taste

Black pepper, to taste

1 tablespoon fresh parsley, chopped

How to Make It

Petunjuk

Heat 2 tablespoons of the olive oil in a large skillet over medium heat. Add the sausage slices and cook until browned on both sides. Remove to a plate and set aside.

Add the remaining 1 tablespoon olive oil to the same skillet. Add the potatoes and season with salt, pepper, paprika, and oregano. Cook for 10 to 15 minutes, stirring occasionally, until the potatoes are golden and nearly tender.

Add the chopped onion and red bell pepper, if using. Continue cooking until the vegetables are softened and the potatoes are fully cooked.

Return the sausage to the skillet and stir everything together until heated through.

Sprinkle with fresh parsley and serve hot, straight from the skillet.
