Carbone's Spicy Rigatoni

10 oz pipe rigate
2 tablespoons olive oil
1 tablespoon butter
1/2 onion chopped
2 large or 4 small garlic chopped
1 shallot chopped
Salt for pasta water and one teaspoon salt for sauce
A pinch of sugar - optional if you don't like don't add
1 heaping tablespoon of Calabrian chili sauce / paste
6 oz tomato paste
1 cup (8 oz ) heavy whipping cream
1/4 cup Parmesan cheese shredded
3-4 tablespoons sliced fresh basil
1/4 cup vodka or water / broth
1/2 pasta water - use what you need
Chop onion,garlic, shallot
To a pan add olive oil and butter. When melted add in the onions and cook 2 mins on medium to low heat ( enough heat so it does not burn )
Add in shallot and garlic and cook another minute.
Add in the Calabrian chilis and cook 30 seconds.
Add in tomato paste and cook on low heat mixing for about 5 minutes. Let it cook and caramelize. Don't let it burn.
Add in the vodka and mix. If using vodka cook a minute to burn off the alcohol.
Add in the heavy whipping cream while whisking/stirring.
Let it cook a few minutes and you will see the sauce go from white to dark yellow red as it thickens.
Add in the basil, Parmesan cheese, pasta and a bit of the pasta water if too thick. ( don't add all the reserved pasta water . Only add as you need it to create a silky sauce.
Add a pinch of sugar and salt per taste. Add more or less Calabrian chilis as per your taste.
