Tandoori chicken

Juice of 1 lemon
2 tsp paprika
1 red onion, finely chopped
8 skinless chicken thighs
Vegetable oil, for brushing
For the marinade:
150ml Irish Greek-style yoghurt
4cm piece of ginger, peeled and grated
2 garlic cloves, crushed
1/2 tsp garam masala
1/2 tsp ground cumin
1/2 tsp chilli powder
1/4 tsp turmeric
To serve:
Rice
Raita

1 Mix the lemon juice with the paprika and red onions in a resea able plastic bag. Make a few shal ow cuts 'n each chicken thigh, add to the bag and mix to coat. Set aside for 10 minutes.
2 Mix all of the marinade ingredients together and pour over the chicken. Mix everything until coated and refrigerate for at least one hour, or overnight if possible.
3 Heat a barbecue or grill pan over a medium- high heat. Brush the grates with a bit of oil and cook the chicken for eight minutes per side or until charred and cooked through. Serve hot with rice and raita.
