STICKY WHISKEY BACON JAM

340g streaky bacon, chopped

8 shallots, finely chopped

2 garlic cloves, crushed

½ tsp chilli powder

¼ tsp paprika

½ tsp espresso powder

Salt and black pepper

60ml whiskey

60ml maple syrup

30mI balsamic vinegar

100g brown sugar

1 In a large pan over a medium heat, cook bacon for 6-8 minutes until golden. Transfer to a plate lined with kitchen paper, reserving about two tablespoons of fat in the pan.

2 Add the shallots and cook over a medium heat for 5-6 minutes until softened, stirring occasionally. Add the garlic and cook for

30 seconds. Add the chilli powder, paprika, espresso powder and some salt and pepper.

3 Stir in the whiskey and maple syrup. Turn the heat to high, bring to a boil and cook for 3-4 minutes, stirring constantly. Add the balsamic vinegar and brown sugar and stir for another 2-3 minutes.

4 Add the bacon, turn the heat to low and cook for 10-12 minutes, stirring occasionally. Set aside and allow to cool slightly.

5 Transfer half of the bacon jam to a food processor and whizz until almost smooth. Stir back into the remaining jam. Serve on burgers with your melted cheese of choice.
