ad episode 25 & we have these gorgeous satay chicken made using @morenutrition.uk protein coconut milk. It is the perfect way to lower the calories & increase the protein in the dish whilst still keeping that creamy coconut milk flavour.

To make this for 2 people you will need:

500g chicken breast diced

3 scoops @morenutrition.uk protein coconut milk

2 tbsp peanut butter

3 tbsp thai red curry paste

3 tsp garlic paste

2 tsp ginger paste

2 tbsp soy sauce

1 tsp fish sauce

Juice 1/2 lime

285ml water

Bunch fresh coriander finely chopped

To a shaker or bowl add the protein coconut milk powder & water then mix well.

To another bowl add the chicken, 1 tbsp peanut butter, 1 tbsp curry paste, 1 tsp garlic, 1 tsp ginger & 50ml of the coconut milk then mix well until fully coated.

Petunjuk

Add the chicken to 4 skewers then cook in the airfryer for 20 mins at 190C.

Whilst the chicken is cooking, to a pan add the remaining peanut butter, curry paste, garlic, ginger, soy sauce, lime juice & coconut milk.

Stir well on a low heat until full combined for around 10 mins ensuring not to allow it to come to the boil, then add in the chopped coriander.

Once the chicken is cooked serve with rice & broccoli then pour over the sauce.

Add optional garnish of crushed peanuts & chopped chillies.
