Rack of Lamb with Mashed Potatoes and Grilled Asparagus

Potatoes
2kg sweet potatoes, about 5 large or 6 medium, peeled and cut into 1-inch cubes
4 tablespoons unsalted butter, cut into pats, plus more for serving
½ cup milk, warmed
¼ cup maple syrup
1 teaspoon sea salt, plus more for cooking the potatoes
Freshly ground black pepper
Fresh thyme leaves, optional, for garnish

Potatoes
Place the sweet potatoes in a large pot and cover with cold water by 1 inch. Stir 1 tablespoon salt into the water.
Bring to a boil over high heat, then reduce the heat to maintain a gentle boil. Cook for 10 to 15 minutes, or until the potatoes are easily pierced with a fork.
Drain the potatoes and return them to the pot. Add the butter, milk, maple syrup, salt, and several grinds of pepper. Use a potato masher to mash until smooth and well combined.
Season to taste and serve topped with more butter and fresh thyme leaves, if desired.
Asparagus
The bottom of asparagus spears are pretty tough and nearly impossible to bite through, even when cooked. Trim the bottom inch or so off of each spear, or peel off the thick green outer layer using a vegetable peeler. Then, layer on a sheet pan in a single layer and add your extra-virgin olive oil.
Next, season your asparagus generously. Don't be shy with salt and pepper, or else your asparagus can turn out very bland. Then, roast until tender and slightly charred. Don't be afraid of that char—charred spears are one of life's greatest pleasures. Once done, plate your asparagus and add a squeeze of lemon juice if you're looking for a simple way to really enhance this veggie side.
Step 1
Preheat oven to 450º. On a large baking sheet, toss asparagus with olive oil and season generously with salt and pepper.
Step 2
Roast until tender and slightly charred, 12-15 minutes.
