SPICY SAUSAGE RRGÚ

Bahan-bahan

1 tbsp olive oil

1 large onion, finely chopped

1 large carrot, finely chopped

2 celery stalks, finely chopped

300g pork sausages, casings removed

50g chorizo, cut into small cubes

2 garlic cloves, finely chopped

1 tsp crushed chillies

1 tsp smoked paprika

1 x 400g tin of chopped tomatoes

1 tbsp balsamic vinegar

400g rigatoni pasta

To serve:

Fresh parsley, chopped

Parmesan, grated

Petunjuk

1 Heat the olive oil in a large pan over a high heat. Add the onion, carrot, celery, sausages and chorizo and cook for 10 minutes, breaking up the sausage meat with a wooden spoon.

2 Add the garlic, chilli flakes, paprika and cook for one minute longer, then stir in the tomatoes and balsamic vinegar. Reduce the heat to medium and leave to simmer for

15 minutes.

3 Meanwhile, bring a large pan of salted water to a boil over a high heat and cook the pasta according to package instructions. Drain, reserving two tablespoons of the pasta cooking water.

4 Toss the pasta together with the sauce and the reserved water. Divide amongst bowls and top each portion with some parsley and Parmesan, to serve.
