Plum Upside-Down Tart

1 Preheat the oven to 200"C/180"C fan/gas mark 6 and melt the butter in an ovenproof frying pan over a medium-high heat. Sprinkle in the brown sugar and salt and place the plums, cut-side down, in the pan
to form a single layer. 2 Return to the heat and cook for seven minutes without stirring. 3 Meanwhile, roll out the puff pastry on a floured surface to a 35cm circle. 4 Remove the pan from the heat and top with the pastry. Transfer the entire pan to the oven and cook for 35 minutes until the pastry is golden brown and the juices are thick. Leave to cool slightly, then turn out onto a serving platter. Slice into wedges and serve warm with the whipped cream.
