ALMOND CHOCOLATE-DIPPED CRESCENT PASSOVER COOKIES

Ingredients

2 egg whites

1/2 cup white sugar

1/2 tsp almond extract

1 1/2 tbsp oil

2 cups almond flour

1 cup sliced almonds

Chocolate mixture

1/3 cup semi sweet chocolate chips

1 tsp oil

Instructions

In bowl add egg whites and whisk just until foamy.

2 Add sugar and whisk for a few seconds, add almond extract and oil and whisk.

Slowly add to almond flour until mixed in. If too dry add another egg white, if too wet add another tbsp of almond flour.

4 With hands form into a ball.

5 With your fingers crush sliced almonds until smaller pieces are achieved.

With a tbsp measuring spoon take the dough and make a ball then roll between hands and form crescent.

Dip into nuts and put on parchment paper on a baking sheet. If nuts don't stick well just wet your hands slightly. • Bake at 350 F for about 20 minutes just until lightly browned. Let cool.

Melt chocolate and oil until smooth and dip ends of cookies into melted chocolate. Chill until firm.

Dust with icing sugar.
