Prawn & sausage gumbo

4 sausages (spicy, raw chorizo-style work well)
1 onion, chopped
1 red pepper, deseeded and sliced
2-3 tsp Creole seasoning, or use Cajun seasoning
250g long-grain rice
500ml chicken stock
400g can chopped tomatoes
200g pack large cooked prawns
small bunch coriander, most chopped

1 Heat a large, deep, non-stick frying pan or flameproof dish with a lid. Add the sausages and brown all over for 5-8 mins — you don't need to add any oil as there is plenty of fat in the sausages. Remove the sausages, tip out some oil if there is a lot, then add the onion and soften for 5 mins. Add the pepper and seasoning, and cook for 1 min more.
2 Stir in the rice, pour in the stock, bring to a simmer, then cover and cook for 10 mins. Add the tomatoes and cook for a further 10 mins. Return the sausages, stir through the prawns and chopped coriander, and cook, uncovered, for a further 5 mins or until hot and the rice is cooked. Sprinkle over the remaining coriander leaves just before serving.
