For the Chicken & Vegetables:
8 bone-in, skin-on chicken thighs
3 cups baby potatoes, halved
2 cups broccoli florets
1 red bell pepper, chopped
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon lemon juice (optional)

2 tablespoons chopped parsley

Preheat oven to 400°F and lightly grease a large baking dish.
In a large bowl, toss the potatoes, broccoli, and bell pepper with 2 tablespoons olive oil, half the garlic, oregano, thyme, salt, and pepper until evenly coated.
Pat the chicken thighs dry, then rub them with the remaining olive oil, garlic, paprika, salt, and pepper.
Spread the vegetables evenly in the baking dish and place the chicken thighs on top.
Roast for 35 to 40 minutes until the chicken is golden and reaches an internal temperature of 165°F.
Broil for 2 to 3 minutes at the end for extra crispy skin.
Drizzle with lemon juice and sprinkle with parsley before serving.
Let rest for 5 minutes, then serve warm.
