Fakeout Takeout Chinese Chicken

Chicken
800 g boneless, skinless chicken breast (if u prefer u can use chicken thighs but bake for way longer)
1 egg
¾–1 cup potato starch or arrowroot starch
Oil spray
Sauce
¾ cup+ 1 tbsp chicken stock (divided)
½ cup silan (date syrup)
¼ cup honey
2-2½ tsp salt (adjust depending on stock saltiness)
1 tbsp onion powder
4 cloves garlic, minced
1 tsp ginger,minced
1 tbsp potato starch or arrowroot starch (for slurry)

Sliced scallions

1.Cut the chicken into small pieces cut in to about 6 pcs per chicken breast.
Add the egg and mix well until fully coated.
Gradually add the starch (start with ½ cup and then keep adding ), mixing until the chicken is evenly coated.
Line a baking tray with parchment paper and spray with oil.
Arrange chicken in a single layer and spray the tops generously.
Bake at 200°C for 5-7 minutes.
Switch to broil (grill) for 3–4 minutes, until golden and crispy.
In a saucepan, combine:
¾ cup chicken stock ,Silan ,honey ,garlic ,ginger ,salt and onion powder.
Bring to a boil and cook for a few minutes.
Mix 1 tbsp chicken stock with 1 tbsp starch to form a slurry(this thickens the sauce)Stir into the sauce and cook until thickened to a glossy consistency.
Pour sauce over hot chicken and toss to coat.
Garnish with sliced scallions and serve immediately.
Make Ahead & Freezing (best to under bake abit)
Let the chicken and sauce cool completely.
Freeze separately for best texture,Store chicken in a pan and Store sauce in a container.
To reheat:
Reheat chicken in oven on low or on hot plate uncovered to crisp it back up.
Warm sauce separately and toss together just before serving.
