2 large onions, chopped
2 garlic cloves, crushed
50g mushrooms, chopped
25g butter
1/2 teaspoon rosemary
1/2 teaspoon basil, optional
1/2 teaspoon celery seed
1 teaspoon yeast extract
1 heaped tablespoon plain flour
150ml water or stock
2 eggs, beaten
225g grated walnuts or hazel nuts
125g soft wholemeal breadcrumbs
sea salt
freshly ground black pepper
Petunjuk
Set oven to 190C.
Fry the onions in the butter with the herbs and celery seed until lightly browned.
Stir in the yeast extract and flour.
Add the water/stock until thickened, then add the beaten eggs.
Cook for 2 minutes, then add the grated nuts and breadcrumbs, and season to taste.
Line a loaf tin with a long strip of non-stick paper. Butter well.
Spoon mixture in, and level the top. Cover with tin foil, and bake for 1 hour. OR the nut roast can be rolled in breadcrumbs or crushed cornflakes, dotted with butter and baked at the same temperature for 45 minutes.
Serve with vegetarian gravy and redcurrant jelly.
