One Pan Creamy Chicken & Chorizo Orzo

For the 3rd recipe of my lazy girl dinnerss, we have this quick and easy orzo dish! It’s flavourful, high in protein and very little effort needed. Save for later ☝🏼

37g PRO, 58g CHO, 15g FAT

60g of chorizo, diced

3 cloves of garlic, minced

1 red onion, finely diced

400g of uncooked chicken breast, diced

1 tsp of paprika

1 tsp of chilli powder

1 tsp of Italian seasoning

1 red pepper, diced

280g of uncooked orzo

1 chicken stock cube mixed in 560ml of boiling water

Salt/pepper

100ml of light cream

1 tbsp of parmesan

Fresh parsley & 4 tsp of parmesan, for garnish

Petunjuk

Heat a pan on medium heat and. Fry until the chorizo releases its oil and starts to crisp up. Remove and set aside.

Add the garlic and onion and fry for 2 minutes.

Add the chicken to the pan. Fry for 5 minutes then add the paprika, chilli powder and Italian seasoning. Mix well and fry for another 5 minutes until cooked through.

To the same pan, add the red pepper and mix. Add back in the chorizo then, orzo, and stock. Mix well and season with salt/pepper. Bring to a boil.

Then, reduce the heat to simmer and cover with a lid for 10 minutes or until the orzo has absorbed the liquid and is cooked. Let sit for 5-10 minutes off the heat once done.

Mix in the cream and 1 tbsp of parmesan.

Divide into 4 and top with parmesan and parsley per portion.
