Mudd Apple -Beets Infused

Very much inspired by the now closed @deadshotpdx here in Portland 🪦 When they first opened and I was just starting out as a photographer, I shot some of their first cocktails on the menu, and one was some sort of White Negroni infused with beets. So I guess this is in celebration of both mud apples, and shuttered bars.

N E G R O N I

1 part High-proof Gin

1 part Bitter Bianco

¾ part Blanc Vermouth

¼ part Chareau aloe liqueur

Absinthe

BEET 🫜

Grapefruit zest

Since we’re infusing a cocktail, this one makes the most sense to batch multiple serves at once. One red beet is usually plenty to infuse a batch of up to 6x serves.

Once infused, simply pour over a big ol’ @abstract_ice cube 🧊
